Aussie cuisine – what is it and where do you get it? Plus, we head to Tukka for some native Australian food.

We went out onto the streets of Brisbane and we asked people to define Australian cuisine – and to name a couple of key Australian dishes. We were surprised by the varied responses. It seems that Australian food is something we struggle to define.

So with this information in hand we went straight over to Tukka, a West End restaurant that is all about native Australian produce. Emu, ostrich, crocodile – even Tasmanian possum are all present and correct. We tried some of the dishes and interviewed its visionary executive chef and owner, Bryant Wells.
